Chef's Notes

Adapted from my old Kitchen Aid cook book.

Directions

The estimated prep time for this recipe is 15 minutes and 60 minutes cook time.
Saute onion, carrots, celery in a tablespoon of olive oil in soup pot until tender. Add garlic and turkey ham and saute a few more minutes. Add the rest of the ingredients and cook 45-60 minutes or until lentils are tender.

Serve immediately or next day when favors have blended!

  • 1 onion, diced
  • 3 carrots, peeled and diced
  • 2 celery stalks, chopped
  • 1 T. olive oil
  • 1 1/2 c. turkey ham, cut into bite size pieces
  • 1 clove garlic, minced
  • 7 c. water
  • 2 cups lentils, rinsed and drained
  • 1 chicken bouillon cube
  • 2 t. salt
  • 1/4 t. pepper
  • 1/2 t. thyme
  • 2 bay leaves
  • 1 lemon, juiced (about 1/3 c.)
