Adapted from my old Kitchen Aid cook book.
Ingredients
- 1 onion, diced
- 3 carrots, peeled and diced
- 2 celery stalks, chopped
- 1 T. olive oil
- 1 1/2 c. turkey ham, cut into bite size pieces
- 1 clove garlic, minced
- 7 c. water
- 2 cups lentils, rinsed and drained
- 1 chicken bouillon cube
- 2 t. salt
- 1/4 t. pepper
- 1/2 t. thyme
- 2 bay leaves
- 1 lemon, juiced (about 1/3 c.)
Directions
Saute onion, carrots, celery in a tablespoon of olive oil in soup pot until tender. Add garlic and turkey ham and saute a few more minutes. Add the rest of the ingredients and cook 45-60 minutes or until lentils are tender.
Serve immediately or next day when favors have blended!
