Moist and delicious! You can't eat just one!!!
Ingredients
- 1 c. butter, softened
- 1 pkg (8 oz) cream cheese, softened
- 1 1/2 c. sugar
- 1 1/2 t. vanilla
- 4 eggs
- 2 c. flour
- 1 1/2 t. baking powder
- 1/2 t. salt
- 2 c. fresh or frozen cranberries
- 1/2 c. chopped pecans
Directions
In large mixing bowl, cream the butter, cream cheese, sugar and vanilla. Add eggs, one at a time, beating well after each addition. Combine flour, baking powder and salt; stir into creamed mixture until just moistened. Fold in cranberries and pecans.
Fill paper-lined muffin cups 3/4 full.
Bake at 350 for 20-25 minutes (or 18-20 for minis) or until toothpick comes out clean. Cool on wire rack.
