Delicious way to use some of that summer bounty!
Ingredients
- 1 pint grape tomatoes, quartered
- 1/4 c. red onion, chopped
- 1 garlic clove, minced
- 2 T. Balsamic Vinegar
- 4 boneless chicken breast
- salt and pepper to taste
- 1/2 c. pesto
- 2 c. mozzarella cheese, shredded
Directions
Heat oven to 375.
In small bowl, combine the tomatoes, red onion, garlic and vinegar.
In baking dish, place the chicken breast and top with pesto and salt and pepper. Put the tomato mixture on top of each breast. Sprinkle cheese on top.
Bake for 25-30 minutes or until chicken is done.
