Light, healthy, and yummy! Taken from Wegman's Grocery Magazine.
Ingredients
- 1 cup Red (or tri colored) quinoa, cooked
- 1 (12 oz) can sweet corn
- 1/2 cup chopped fresh cilantro
- 1 bunch green onions, trimmed, thinly sliced on bias (about 1 cup)
- 2 plum tomatoes, 1/4-inch dice (about 1 cup)
- 1 avocados, peeled, pitted, 1/4-ince diced
- 1/2 lemon, squeezed for juice
- 1/2 tsp salt
- 1/2 tsp black ground pepper
Directions
Add the cooked quinoa, corn, cilantro, green onions, and tomatoes into a bowl, toss to combine. Fold in avocado and lemon juice. Season with salt and pepper. Served chilled or at room temperature. Enjoy!
