Ingredients
- 2 cups leeks, chopped
- 1 medium zucchini
- 15 oz can kidney beans
- 15 oz can garbanzo beans
- 14.5 oz can diced tomatoes
- 14.5 oz can tomato sauce
- 2 Tbps chili powder
- 2 Tbsp light brown sugar
- 1 1/2 tsp curry powder
- 1 1/2 tsp ground cumin
- 1/2 tsp pepper
- 1/4 tsp cinnamon
- 2 sweet potatoes, peeled and chopped bite-size
Directions
Prepare the veggies. Put all ingredients in a slow cooker on low for 6-8 hours. Garnish with sour cream or plain greek yogurt, top with shredded cheese.
Optional: add 2-3 chicken breasts before serving.
