Ingredients
- 2 heads cauliflower
- 1 TBS olive oil
- 1/2 tsp chipotle chili powder
- 1 tsp smoked paprika
- kosher salt and pepper
- 4-6 pita breads
- 1 cup hummus
- 1/2 cup crumbled feta cheese
- handful of microgreens for topping
Directions
Preheat oven to 425 degrees.
Chop cauliflower into florets and toss with olive oil, chipotle chili powder, paprika, salt and pepper.
Roast for 15-20 min, shaking the pan halfway through to roast more evenly.
Toast pita breads, spread hummus inside. Add roasted cauliflower and top with feta cheese and microgreens!
