If you anticipate leftovers, keep the chips out of the recipe and crumble on top after it is baked.
Ingredients
- 1 T. oil
- 1/2 c. chopped onion
- 1 clove minced garlic
- 1 lb ground beef
- 28 oz stewed tomatoes
- 1 pkg taco seasoning mix
- 2 1/2 oz can chopped black olives
- Large bag of nacho cheese chips
- 1/2 lb mozzarella cheese, shredded
- 2 c. sour cream
- 1/2 c. shredded cheddar cheese
Directions
Preheat oven to 350. Saute onion in oil and add beef until browned. Blend in tomatoes, taco seasoning and olives. Simmer 10 min.
Grease 9 x 13 inch pan. Layer chips on bottom; add all meat mixture, then mozzarella, then sour cream. Top with remaining chips. Bake until heated through - about 30 min. Sprinkle with cheddar cheese and bake until cheese melts. Let stand about 5 min before serving
