Quick and easy snack/breakfast muffins!

Directions

The estimated prep time for this recipe is 10 minutes and 15 minutes cook time.
Preheat oven to 350 degrees. Use a box grater to grate the zucchini.

In a bowl, combine flour, baking soda, cinnamon, and a pinch of salt. In a separate bowl, whisk together sugar, egg, vanilla, butter, and zucchini.
Add flour mixture to the zucchini mixture, gently stirring until fully combined. Fold in chocolate chips.

Using a tablespoon, divide batter between cups in greased mini muffin tin and bake for 15 min. until a toothpick inserted into the center comes out clean.
